I got this a while back, and it works pretty good! It has a super thin slicer to make it a lot easier. Can't wait to see more of your cooking!

I'm going to have to get one of those! Ally loved the chips, and they're a lot healthier so it would be worth getting to make them easier.

I have never thought of doing potatoes in the microwave like that. I have a great recipe for roasted potatoes in the oven that I use all that time that is similar to that and usually has fantastic results. Next time I'll have to throw a few slices in the mocrowave to compare!

This thread makes me want to start my own cooking thread with recipes I make on my Big Green Egg.

Thanks! You should definitely try them! I haven't cooked potatoes very much so I was interested in experimenting with this recipe. I'm sure you even add spices to them before you microwave. That might be good!

I agree, they look like they are destined to have some Tony Chachere's Cajun Seasoning sprinkled upon them (I can use Tony's on near every thing)

I told y'all I would try to do another recipe over the weekend, and I did! Chocolate Cobbler. I got this recipe out of a school fundraiser cookbook that Ally's school sold. I've made something similar to it in the past (though not on this thread). It's delicious and very easy. I don't have the cookbook with me at work, but I took a picture of the recipe so I don't have to type it here. Enjoy!

And here's the recipe.

Using the measurements specified for the sugar and cocoa in the directions, mix those five ingredients in a bowl. I say using the measurements because if you notice there are two separate measurements for sugar and cocoa.

When you mix it all up, it looks like this. Just mix with a spoon, no need to get out a mixer.

Now you need butter.

Boil your water. I did mine in the microwave for 5 minutes.

water on top.jpg
Pour the water on top. Do not stir! Put it in the oven just like this. I don't know how it does what it does, but it's amazing. It forms a crusty chocolately bread-like consistency on top and underneath is sort of like chocolate pudding.

I forgot to take a picture of the whole finished product (sorry!) but here's what I dipped for myself. It's a little runny because I couldn't wait for it to cool. But when it cools the chocolate sets better. Try this!

Okay guys, here's another one for you! I've seen this several places online and finally decided to try it. Homemade Pop Tarts! There's really nothing complicated about them (unless you make your own dough). Here's what I did:

I used two deep dish frozen, unbaked pie crusts (to save time). Let them thaw, then roll out kind of thin, but not too thin to pick up. Cut the edges off to make a rectangle. Cut the rectangles into equal, smaller rectangles. Spread jelly, jam, preserves, etc. on half the smaller rectangles, then put the rectangles together to make a pop tart. Seal the edges by pushing them down with your finger (or get fancy and use a tool to crimp the edges). Brush with an egg wash (1 Tbsp. milk to one egg) and bake for about 10 minutes or so. I really didn't keep up with the time, just checked on them periodically. I made these the night before and then reheated them for breakfast. At breakfast I made an icing of confectioner's sugar and milk, then added butterfly sprinkles on the top. They were delicious! I liked them better than real pop tarts. On to the pictures....

Then assemble and seal the edges and brush with egg wash. This was the total number I got from two pie crusts, but they were pretty large for pop tarts, and they could have been rolled thinner.

Done! Tip: Add more fruit spread than you think you should, a lot will seep out during baking.

Interesting- and to quote the Fairy Godmother from 'Shrek II'...

"Now you've gone and done it. I've thrown my diet out the window!"

Since I tend to make my own pie dough (if there's time, of course) I wonder if I could go for the 'fudge' flavour by adding in cocoa instead of flour for parts of the recipe- and use Hershey's squares as filling.

(Yes, I have chocolate dependency disorder...)

We had a sleepover Friday night with our nieces. We had five girls age 10 and under at our house! Lord help us! But I decided to make a yummy dessert (as if they needed to get hyped up on sugar). Here's what I found. Vanilla Crumb Pie. It was amazing. It tasted sort of like vanilla pudding with a crunchy crumb topping. So, so good. They girls loved it, and so did me and Danny. The recipe makes two pies and we've been eating it all weekend. Danny preferred his with vanilla ice cream. Try this pie. It's awesome!

Here's a link to the recipe: Vanilla Crumb Pie

And vanilla. Mix those in well and then pour into your pie crusts. I'm lazy and usually buy pie crusts, but feel free to make your own. I had five little girls at my house impatiently waiting for pie so a homemade crust was not on my agenda.

Cover the tops of the pies with the crumb topping. It gets really nice and crusty in the oven, so make sure you cover the pies well.

And out of the oven doesn't look much different than before it went in. The recipe says bake 20-30 minutes, but I ended up at about 40 minutes and mine still didn't really brown very much. But it was delicious! It has a rich vanilla taste. Yummy!
